Carnitas is a staple of many traditional Mexican dishes, made of slow-cooked pork which provides a tasty and tender filling for burritos, fajitas or tacos. To prepare authentic Carnitas Burritos you’ll need:
5 pound pork loin steak.
1 pack of tortillas.
2 diced onions.
4 finely chopped cloves of garlic.
Salt & Pepper.
1 tsp. oregano.
3 cups of chicken stock.
2 avocadoes, pitted.
1 chilli, finely minced.
Rub the pork steak with the salt, pepper, 3 cloves of garlic and oregano. Then, oil your pan and sauté 1 and ¾ of the onions until golden brown. Add the chilli powder, stir, then add the pork loin steak to the pan. Use the chicken stock to cover the steak and then simmer for 3 hours. You will know the meat is ready when it falls apart easily when touched with a fork. After the fluid has evaporated, sauté the meat until crisp.
Next, mash the avocado with a tablespoon in a bowl. Add a tablespoon of lime juice, a sprinkle of salt, the minced chilli, the final ¼ of onion and your last chopped clove of garlic. Mash to a smooth paste.
To prepare the dish, take a tortilla and half-fill it with 4 parts pork, 2 parts avocado mixture. Fold into a parcel and enjoy!
